HOW TO COOK BAKED POTATO

Ingredients TO COOK POTATO:
4 huge baking potatoes, such as russets
1 box (3oz) cream cheese, softened
1 teaspoon chopped clean or frozen chives
3 tablespoons butter
1/2 cup grated Parmesan cheese
2 tablespoons sour cream
1 egg
1/2 teaspoon salt
dash pepper
paprika, optional
additional grated Parmesan cheese, for garnish
Steps 1 TO COOK POTATO:
Scrub potatoes well; grease softly w/ shortening and pierce with a fork 2 or 3 times.
Steps 2 TO COOK POTATO
Bake in 400° oven for one hour or until fork tender.
Steps 3 TO COOK POTATO
When cool enough to handle, cut potatoes lengthwise & scoop out potato in electric mixer bowl.
Steps 4 TO COOK POTATO
Sum Up remaining ingredients, except egg, and mix well. Sum Up egg & beat until smooth.
Steps 5 TO COOK POTATO
Fill potato shells; sprinkle with extra cheese and paprika, if desired.
Steps 6 TO COOK POTATO
Bake at 375° until puffed and softly browned.
Serves 4.
