Ingredients to cook Smoked Salmon with Apple

6 (1/4-inch thick) slices rosemary or olive bread, quartered

6 ounces Nova Scotia smoked salmon

1 small green apple, such as Granny Smith, halved and cut into very    thin       slices

1 tablespoon capers, rinsed and drained

Extra-virgin olive oil, for drizzling

Kosher salt and freshly ground black pepper

Steps to cook Smoked Salmon with Apple

Step 1 to cook Smoked Salmon with Apple

Put an oven rack in the middle of the oven. Preheat the oven to 400 degrees F.

Step 2 to cook Smoked Salmon with Apple

Set the bread on a baking sheet in a single layer.

Bake for 10 to 12 minutes until lightly brown and crisp.

Cool to room temperature, around 10 minutes.

Ingredients to cook Salmon Spread

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1 teaspoon prepared horseradish, drained
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 pound (4 ounces) smoked salmon, minced

Steps to cook Salmon Spread

Step 1 to cook Salmon Spread

Cream the cheese in an electric mixer fit w/ a paddle attachment until just smooth.

Step 2 to cook Salmon Spread

Put the sour cream, lemon juice, dill, horseradish, salt, & pepper, and mix.

Put the smoked salmon and mix well.

Step 4 to cook Salmon Spread

Chill & serve w/ crudites or crackers.

If you can find it, I prefer Norwegian salmon; it’s drier and less salty than usual smoked salmon.

1/4 cup Dijon mustard
2 tablespoons whole-grain mustard
3 tablespoons honey
2 tablespoons prepared horseradish, drained
2 tablespoons finely chopped fresh mint leaves
Kosher salt and freshly ground black pepper
2 pound fillet salmon, skin on
2 tablespoons canola oil
1 bunch watercress, coarsely chopped
1 small red onion, halved and thinly sliced
2 tablespoons aged sherry vinegar
2 tablespoons extra-virgin olive oil

salt and pepper
4 tbsp. Extra Virgin olive oil
16 fl. oz. white wine
1 Bay leaf
4 oz. leek, chopped
a sprig of fresh thyme
2 tsp. peppercorns
2 (6 oz.) salmon tranche or steaks

To prepare dressing, blend lemon zest, lemon juice, salt, & pepper. Whisk in oil.

combine the wine, leek, thyme, bay leaf, & peppercorns in the bottom of a steamer.

Flavour salmon w/ salt and pepper and order in steamer basket

Cover steamer and bring liquid to a boil.

1 can (14.5 oz) spinach drained

1/4 cup shredded part-skim mozzarella cheese

Preheat oven to 450°F.

Coat a 9 1/2-inch pie plate w/ a small vegetable oil (around one teaspoon).

Spread the couscous over the bottom of the dish & pour out one cup simmering water over top. Stir to moisten & distribute in an even layer.

1 cup soy sauce
1/4 cup rice vinegar
1/4 cup freshly squeezed lemon juice (2 lemons)
2 tablespoons oyster sauce
1 tablespoon fish sauce
1 tablespoon toasted (dark) sesame oil
1 1/2 teaspoons chili paste
1/2 cup sliced scallions (2 scallions)
2 tablespoons minced garlic (8 large cloves)
2 tablespoons minced fresh ginger
1 1/2 cups panko (Japanese bread crumbs)

Steps to cook Asian Salmon

Step 1 to cook Asian Salmon

Put an 8 by 12-inch baking pan with aluminum foil. Put the salmon in the cooking pan.

In a blending cup, combine the soy sauce, rice vinegar, lemon juice, oyster sauce, fish sauce, sesame oil, chili paste, scallions, garlic, & ginger.

Pour 1/3 of soy sauce mixture through the salmon fillet.

Sprinkle the panko equally all over the fillet.

Meantime, preheat the oven to 500 degrees F. Roast the salmon for 18 to 20 min, or for some 12 minutes per inch at the thickest part of the salmon.

The internal temperature will be 120 degrees F on a meat thermometer when it’s finished. take out from the oven, wrap tightly w/ aluminum foil, and allow to rest for 15 minutes. Serve asian salmon hot or at room temperature.

1/3 cup buckwheat flour
2/3 cup all-purpose flour
1/2 teaspoon baking powder
3/4 teaspoon kosher salt
3⁄4 cup plus 2 tablespoons milk
1 extra-large egg
1/4 pound (1 stick) unsalted butter, clarified, divided
1/2 pound smoked salmon, thinly sliced
1/4 cup creme fraiche or sour cream
Fresh dill sprig, for garnish

Mix both flours, baking powder, & salt in a bowl.
