Ingredients to cook Chicken Florentine

2 10-ounce packages frozen chopped spinach
6 chicken breast halves about 4 pounds, cooked, boned, and shredded
2 10 3/4-ounce cans condensed cream of mushroom soup
1 cup mayonnaise
1 cup sour cream
2 cup ground sharp Cheddar
2 tablespoonfuls fresh lemon juice
1 teaspoon curry powder
Salt and fresh ground black pepper
1/2 cup dry white wine
1/2 cup fresh grated Parmesan
1/2 cup soft bread crumbs
2 tablespoons butter

Steps to cook Chicken Florentine

Step 1 to cook Chicken Florentine

Remove the outer wrappers from the box of spinach & open 1 end of each box. Microwave on full power for 2 minutes, until thawed.

Step 2 to cook Chicken Florentine

Drain the spinach and put into a large bowl then add the sliced chicken.

In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce.

Pour the sauce over the spinach & chicken and mix well w/ a spatula.

place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray.

Pat down evenly & smooth w/ a spatula then blend the Parmesan & bread crumbs & sprinkle over the top. Dot with the butter.

Wrap the uncooked casserole securely w/ plastic wrap, then w/ aluminum foil.

put each pan into a plastic freezer bag & seal and place into freezer.

Step 9 to cook Chicken Florentine

Allow casserole to melt 24 hours in refrigerator and then ready to bake, remove the plastic wrap & foil.

Step 10 to cook Chicken Florentine

Bake exposed at 350 degrees F for about 30 min until bubbly.

4 cups chicken stock, home made or store bought
3/4 cup diced onion
3/4 cup diced celery
1 tablespoon minced garlic
2 ounces dried egg noodles, cooked to al dente
1/2 teaspoon fine chopped fresh tarragon leaves
2 teaspoons finely chopped fresh parsley leaves
Lemon halves, for serving

Steps to cook Chicken Soup Noodle

Step 1 to cook Chicken Soup Noodle

Bring stock to boil for 2 minutes in a large, non-reactive stockpot w/ lid on, over high heat.

Step 2 to cook Chicken Soup Noodle

Add onion, celery, & garlic.

Lower heat & simmer for 2 mins.

Step 4 to cook Chicken Soup Noodle

Add noodles & cook 5 more minutes.

Transfer from heat and add herbs and salt and pepper, to taste.

Ingredients to cook Cacciatore Chicken

4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves

1/4 cup coarsely chopped fresh basil leaves

Steps to cook Cacciatore Chicken

Step 1 to cook Cacciatore Chicken

Scatter the chicken pieces with 1 teaspoon of for each one salt and pepper. Dredge the chicken pieces in the flour to coat lightly.

In a large heavy saute cooking pan, heat the oil through a medium-high flame.

Add the chicken parts to the pan and saute just until brown, just about 5 minutes per side.

Return the chicken parts to the cooking pan and turn them to coat in the sauce. Bring the sauce to a simmer.

Stay simmering over medium-low heat up until the chicken is good cooked through, about 30 minutes for the breast parts, & 20 minutes for the thighs.

Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slenderly, about 3 minutes.

Spoonful off any excess fat from atop the sauce. Spoonful the sauce over the  Cacciatore Chicken, then Disperse w/ the basil & serve.

1 clove garlic, coarsely chopped
1/2 pound (8 ounces) mezze penne or other small pasta
1/3 cup olive oil, plus extra for drizzling
1/4 cup dried oregano
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
4 to 5 very ripe, extra-large or beefsteak tomatoes, cut into 1/2-inch thick slices

Position an oven rack in the center of the oven. Preheat the oven to 450 degrees F.

Bake until the tomatoes are slightly crispy and the pasta is cooked, about 1 hour.

Remove from the oven and cool the pasta for 5 minutes before serving.

1 large cucumber, chopped
1 1/2 cups shredded cheddar cheese
1 1/2 cups mozzarella cheese, shredded
1 1/2 cups broccoli, chopped
1 1/2 cups carrot, shredded

Directions to cook Pasta Salad:

Step 1 to cook Pasta Salad

Ready pasta; drain & Cleanse with cold H2O.

Step 2 to cook Pasta Salad

Sum Up olives, mushrooms, celery, peppers, onion, cucumber, cheeses, broccoli, and carrots.

1/4 Caesar Salad Dressing (more or less to taste & to coat)

Cook ground beef until done. Drain; set aside. Brown Cook until done. Remove water; set aside.
