GRILLED SWORDFISH WITH TOMATO AND CAPER SAUCE

Ingredients to cook Grilled Swordfish with Tomato and Caper Sauce

1 cup chopped yellow onion (1 onion)
1 cup chopped fennel (1 bulb)
3 tablespoons good olive oil
1 teaspoon minced garlic
28 ounces canned plum tomatoes, drained
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 tablespoons chicken stock
2 tablespoons good dry white wine
1/2 cup chopped fresh basil leaves
2 tablespoons capers, drained
1 tablespoon unsalted butter
4 (1-inch-thick) swordfish fillets (about 2 1/2 pounds)
Fresh basil leaves

Procedures

Step 1 to cook Grilled Swordfish with Tomato and Caper Sauce

For the sauce, cook the onions and fennel in the oil into a large saute pan on medium-low ignite for ten mins, ’til the veggies are soft.

1 lemon, zested
1 lime, zested
1 orange, zested
2 ounces olive oil
1 tablespoon ground coriander
2 tablespoons chopped flat leaf parsley
1 teaspoon kosher salt
3 Hungarian hot peppers
1 red onion
12 cherry tomatoes

Directions

Set swordfish in a non-reactive container.

Ingredients to cook Tilapia with Potato Chips

Potatoes:

4 russet potatoes
3 tablespoons olive oil
2 tablespoons malt vinegar
Salt & ground black pepper
1/4 teaspoon cayenne pepper

Fish:

Canola oil, for frying
2 teaspoons baking powder
1/4 teaspoon cayenne pepper
1 teaspoon paprika
2 cups all-purpose flour, plus 1/2 cup for dredging
Salt and freshly ground black pepper
1/2 cup buttermilk
3/4 cup club soda
4 tilapia filets about 1 1/2 lbs., cut in half lengthwise
Tartar sauce, for serving

Steps

Preheat oven to 450 degrees F.

QUINOA

Ingredients TO COOK QUINOA:

* 1 cup quinoa
* 1 1/2 cups cold H2O
* Optional: 1/2 tsp salt

Steps 1 TO COOK QUINOA:

Soak the quinoa for 15 minutes in the cooking pot. Dripping helps quinoa to cook evenly, and loosens up the outer coating of saponin, which can make a bitter taste if not removed

Steps 2 TO COOK QUINOA:

If you don’t have time for a longer soaking, use hot water & soak for 5 min

Steps 3 TO COOK QUINOA:

To Wash: Stir the quinoa w/ your hand, & carefully pour off the washing water, using a adequate net strainer at the end

Steps 4 TO COOK QUINOA:

Drain quinoa well in the strainer, put it to the cooking pot, sum up 1 1/2 cups water & 1/2 teaspoon salt if preferred

Bring to a boiling point, cover w/ a difficult fitting lid, and turn the ignite down to simmer

prepare for 15 minutes

4 huge baking potatoes, such as russets
1 box (3oz) cream cheese, softened
1 teaspoon chopped clean or frozen chives
3 tablespoons butter
1/2 cup grated Parmesan cheese
2 tablespoons sour cream
1 egg
1/2 teaspoon salt
dash pepper
paprika, optional
additional grated Parmesan cheese, for garnish

Steps 1 TO COOK POTATO:

Scrub potatoes well; grease softly w/ shortening and pierce with a fork 2 or 3 times.

Steps 2 TO COOK POTATO

Bake in 400° oven for one hour or until fork tender.

Steps 3 TO COOK POTATO

When cool enough to handle, cut potatoes lengthwise & scoop out potato in electric mixer bowl.

Steps 4 TO COOK POTATO

Sum Up remaining ingredients, except egg, and mix well. Sum Up egg & beat until smooth.

Fill potato shells; sprinkle with extra cheese and paprika, if desired.

Remove off hard stems as much as possible, & Remove any root material.

chop or apply whole leaves – you can likewise chop up the spinach after making, if you like.

Cook spinach the easy way by dropping it into a hot frypan w/ only the water that still clings to the leaves from washing. Fold the prepared spinach at the bottom of the cooking pan over the raw leaves at the top. Continue adding leaves as the spinach cooks down. The spinach is made when the leaves are wilted totally but still bright green, w/c leads around 2 min.
