INGREDIENTS TO COOK SALAD QUINOA

1 cup quinoa
2 cups chicken or vegetable stock
1 hothouse cucumber, diced
2 scallions
1/2 cup roasted red pepper, diced
1/4 cup flat leaf parsley, finely cut
1 tablespoon fines herbs (Spice Island)
1/4 cup crumbled feta cheese
3 tablespoonfuls splintered almonds

For serving:

9 cups spring salad mix
1/4 cup light roasted garlic and balsamic salad dressing

STEPS TO COOK SALAD QUINOA

Step 1 to cook Salad Quinoa

Combine quinoa and stock in small pot and bring to a boil.

Step 2 to cook Salad Quinoa

Reduce to simmer and cover.

Step 3 to cook Salad Quinoa

Cook 10 to 15 min or until liquid has been absorbed. Let cool completely.

Step 4 to cook Salad Quinoa

In a large mixing bowl, Mix cooled quinoa with remaining ingredients. Toss to mix thoroughly.

Step 5 to cook Salad Quinoa

Serve chilled on a bed of greens tossed with a little dressing.

2 cup prepared quinoa
1 cup apple juice concentrate
1/2 cup raisins
1 cup sliced water chestnuts
1 1/2 tsp. vanilla extract
Grated zest of 1 lemon
Pinch of ground cinnamon
1 kiwi fruit for garnish

STEPS TO COOK QUINOA PUDDING

Step 1 To Cook Quinoa Pudding

Thoroughly rinse 1/2 cup quinoa and drain. mix quinoa with 1/2 cup water in a saucepan and bring to a boil.

Cover pan, reduce heat to medium-low, and simmer for 10 to 15 minutes or until water is completely absorbed and grain is translucent.

In a medium saucepan, mix quinoa, apple juice concentrate, raisins, water chestnuts, vanilla, lemon zest, and cinnamon.

1 large red pepper, chopped
12 baby carrots, thinly sliced
1 leek, thinly sliced
5 mushrooms, thinly sliced
1 scallion, sliced in one-inch pieces

1 medium tomato diced small
white vinegar
1 – 1 1/2 pounds fresh okra
(may use frozen okra, thawed)
corn meal

Dice onion and tomato and place together in small mixing bowel, cover with vinegar and set aside.

Roll cut okra in corn meal and fry in hot vegetable oil until golden brown.

Drain okra on paper towel.

1/2 cup red wine vinegar
2 tablespoons honey mustard, or more to taste
Salt and freshly ground black pepper

Spinach Salad:

8 cups fresh spinach leaves, stems removed
8 ounces white button mushrooms (about 2 1/2 cups), thinly sliced
1/2 red onion, thinly sliced

In a frypan add the bacon & cook over medium heat up until crisp.
