INGREDIENTS TO COOK ROASTED BEETS WITH FETA

2 (15 1/4-ounce) cans sliced beets, rinsed and drained
1 1/2 cups crumbled feta cheese
1/2 cup pitted ripe olives
1/4 cup chopped fresh dill
1/2 cup olive oil
1/4 cup rice wine vinegar
Salt, pepper and garlic powder, to taste
Dash hot sauce

STEPS TO COOK ROASTED BEETS WITH FETA

Step 1 to Cook Roasted Beets with Feta

Take broiler tray from oven and coat with nonstick cooking spray.

Step 2 to Cook Roasted Beets with Feta

Replace tray and preheat broiler.

Step 3 to Cook Roasted Beets with Feta

After beets are drained place on coated broiler tray.

Place under hot broiler, turning every 2 to 3 minutes until edges start to brown, more or less 8 to10 min.

Remove beets from oven and allow to cool. Merge remaining ingredients with cooled beets. Toss and serve well.

1/2 Bermuda onion, thinly sliced
1 large red pepper, chopped
12 baby carrots, thinly sliced
1 leek, thinly sliced
5 mushrooms, thinly sliced
1 scallion, sliced in one-inch pieces

  • 1 heaping tablespoon Hellman’s mayonnaise
  • 1 tablespoon lemon juice

Step to cook Baked Flounder with Celery Sauce

Step 1 to cook Baked Flounder w/ Celery Sauce

Preheat Oven 425°F.

Step 2 to cook Baked Flounder w/ Celery Sauce

Blend Cream of Celery Soup, mayonnaise, & lemon juice.

Step 3 to cook Baked Flounder w/ Celery Sauce

Coat the bottom of baking pan with mixture.

Lay fish fillets on top, & coat top with unconsumed mixture.

3-5 lbs collard greens, 2 lbs broccoli rabe, or mustard greens
1 1/2 tsp salt
3 cloves garlic, chopped
1/4 tsp red pepper flakes
salt and pepper to taste

Steps to Cook Collard Greens

Step 1 to Cook Collard Greens

Put ham hocks and garlic in a large soup pot and bring to a boil.

Step 2 to Cook Collard Greens

Reduce heat and simmer about 3 hours, replacing water as needed allowing water level to reduce a little as you go along.

Step 3 to Cook Collard Greens

When ham hocks begin to fall apart, separate the collard green leaves and rinse each carefully under cold running water.

Roll the leaves up and slice across into strips, or just rip the leaves from the stems and add to the pot – discard the heaviest stems, but don’t be picky.

Step 5 to Cook Collard Greens

As the collards are added gradually to the pot and they begin to wilt down, continue to add until all are used.

Season with the salt, then cover and simmer, stirring occasionally, for about 30 minutes more over medium heat until the greens are tender.
