1/3 cup extra virgin olive oil
1/2 teaspoon sea salt

1 tablespoon chopped shallots
1/2 tablespoon minced garlic
1/4 cup Guinness or dark Irish Ale
3 tablespoons smoked ham, chopped
1 cup demiglace
1 tablespoon chopped parsley
1-2 tablespoons butter

Sprinkle tenderloin steaks with salt and cracked peppercorns.

In a heavy skillet, saute steaks until medium rare.
