Stuffing with seasoning, prepared per instructions
3 tsp olive oil (divided)
1/4 sweet yellow onion, cubed
8-10 button mushrooms, sliced

2 cup prepared quinoa
1 cup apple juice concentrate
1/2 cup raisins
1 cup sliced water chestnuts
1 1/2 tsp. vanilla extract
Grated zest of 1 lemon
Pinch of ground cinnamon
1 kiwi fruit for garnish

Thoroughly rinse 1/2 cup quinoa and drain. mix quinoa with 1/2 cup water in a saucepan and bring to a boil.

2 c. sugar
1 c. shortening
2 eggs
1 c. milk
3 c. blueberries
4 tbsp. flour
2 tbsp. sugar
1 1/2 c. sugar
3 tbsp. cornstarch
1/2 tsp. salt
3/4 c. cold water
1 1/2 c. boiling water
1/2 c. + 1 tbsp. FRESH lemon juice
3 tsp. lemon rind
1 1/2 tsp. vanilla
6 tbsp. butter

Sift together flour, baking powder, salt. In another bowl merge sugar and shortening.
