Ingredients to cook Cacciatore Chicken

4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves

1/4 cup coarsely chopped fresh basil leaves

Steps to cook Cacciatore Chicken

Step 1 to cook Cacciatore Chicken

Scatter the chicken pieces with 1 teaspoon of for each one salt and pepper. Dredge the chicken pieces in the flour to coat lightly.

Step 2 to cook Cacciatore Chicken

In a large heavy saute cooking pan, heat the oil through a medium-high flame.

Add the chicken parts to the pan and saute just until brown, just about 5 minutes per side.

If all the chicken does not fit in the cooking pan, saute it in 2 batches. Transfer the chicken to a plate & set aside.

Put the bell pepper, onion and garlic to the same pan & saute over medium heat until the onion is tender, about 5 minutes.

Season w/ salt & pepper. Add the wine and simmer until reduced by half, just about 3 minutes.

Put the tomatoes with their juice, broth, capers and oregano.

Return the chicken parts to the cooking pan and turn them to coat in the sauce. Bring the sauce to a simmer.

Stay simmering over medium-low heat up until the chicken is good cooked through, about 30 minutes for the breast parts, & 20 minutes for the thighs.

Step 10 to cook Cacciatore Chicken

Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slenderly, about 3 minutes.

Step 11 to cook Cacciatore Chicken

Spoonful off any excess fat from atop the sauce. Spoonful the sauce over the  Cacciatore Chicken, then Disperse w/ the basil & serve.

1/2 pound fresh spinach, chopped
2 tablespoons peanut or vegetable oil
1 carrot, shredded
4 ounces Angel hair pasta

Take off chicken meat from bones and cut into 1 inch pieces.

1 clove garlic, coarsely chopped
1/2 pound (8 ounces) mezze penne or other small pasta
1/3 cup olive oil, plus extra for drizzling
1/4 cup dried oregano
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
4 to 5 very ripe, extra-large or beefsteak tomatoes, cut into 1/2-inch thick slices

Position an oven rack in the center of the oven. Preheat the oven to 450 degrees F.

Bake until the tomatoes are slightly crispy and the pasta is cooked, about 1 hour.

5 slices bacon

1/2 cup red wine vinegar

Spinach Salad:

8 cups fresh spinach leaves, stems removed
8 ounces white button mushrooms (about 2 1/2 cups), thinly sliced
1/2 red onion, thinly sliced

In a frypan add the bacon & cook over medium heat up until crisp.

1 cup soy sauce
1/4 cup rice vinegar
1/4 cup freshly squeezed lemon juice (2 lemons)
2 tablespoons oyster sauce
1 tablespoon fish sauce
1 tablespoon toasted (dark) sesame oil
1 1/2 teaspoons chili paste
1/2 cup sliced scallions (2 scallions)
2 tablespoons minced garlic (8 large cloves)
2 tablespoons minced fresh ginger
1 1/2 cups panko (Japanese bread crumbs)

Steps to cook Asian Salmon

Step 1 to cook Asian Salmon

Put an 8 by 12-inch baking pan with aluminum foil. Put the salmon in the cooking pan.

In a blending cup, combine the soy sauce, rice vinegar, lemon juice, oyster sauce, fish sauce, sesame oil, chili paste, scallions, garlic, & ginger.

Pour 1/3 of soy sauce mixture through the salmon fillet.

Sprinkle the panko equally all over the fillet.

Pour the stay of the soy sauce mixture equally through the panko.

Be sure to soak the panko completely and if any runs off, spoon back onto the salmon.

Put aside for 15 minutes, leaving all the sauce in the pan.

Meantime, preheat the oven to 500 degrees F. Roast the salmon for 18 to 20 min, or for some 12 minutes per inch at the thickest part of the salmon.

1/2 pound smoked salmon, thinly sliced
1/4 cup creme fraiche or sour cream
Fresh dill sprig, for garnish

1/2 teaspoon onion powder
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cumin
1/2 teaspoon canola oil

Merge together orange juice & lemon juice.

Step 2 To Cook Oven-Baked Salmon

Put salmon in a Ziploc bag and pour the juices over the salmon. Turn  salmon to wrap well on all sides.

Marinate in the refrigerator for 30 minutes.

Combine all spices in a little bowl.

Preheat oven to 400degreesF. Lightly oil a light baking dish w/ canola oil.

Pat dry w/ paper towels. Rub spice mix all over salmon.

1 cup arugula, divided
2 large or 3 medium tomatoes, sliced

In a medium skillet over medium-high heat, cook the bacon until crispy, about 3 to 4 min on each side.
